I’m taking advantage of the delicious peaches that are in season and making Peach Crisp to share! I love the combination of cinnamon and peaches backed together & am topping it off with frozen vanilla yogurt!
Peach Crisp by Jodie Fitz
8 – 10 peaches, ripe
1 1/2 teaspoon cinnamon
1 1/2 cups oats
1/2 cup light brown sugar
1/4 cup butter
Non-stick cooking spray
Vanilla yogurt, low fat
Place the vanilla yogurt in the freezer to fully freeze.
Wash the peaches. Remove the skin by peeling them with a potato peeler. Remove the pit and cut the peaches into cubes/slices.
Pre-heat the oven to 350 degrees.
Stir the cut peaches together with 1 teaspoon of cinnamon. Spray a glass baking dish with the non-stick cooking spray and pour the peaches coated with the cinnamon into the baking dish.
In a separate bowl, cut together the oats, 1/2 teaspoon of cinnamon, light brown sugar and butter together. Pour the mixture on top of the peaches and bake the entire dish for approximately 40 minutes.
Serve warm with a scoop of frozen vanilla yogurt on top & ENJOY!
Little Hand Helpers: Little ones can certainly help with many steps in this process; measuring, pouring, stirring and they can also help with cutting the ripe peaches by using a plastic knife. Making a Peach or Apple Crisp also provides the opportunity to teach children the ‘cutting’ process in baking, which is the even distribution of a cold fat, in this recipe butter, into the other ingredients until it’s cut into small pieces. You can use a pastry cutting tool or a fork for the process.
