Looking for lunch ideas? Peanutty Apple Wraps make a great sandwich alternative to peanut butter and jelly. Once upon a time….I was the mother of a VERY picky eater! I had to get creative and one of the foods my youngest wouldn’t eat was regular sandwiches, so creativity became my saving grace in feeding her on all levels, but especially in the lunchbox. As you know kids taste buds are always changing, but here is one recipe that I still love that worked for a season of pickiness…
Peanutty Apple Wraps! by Jodie Fitz
2 tablespoons reduced fat peanut butter
1 teaspoon honey
½ teaspoon cinnamon
1 medium apple
Whole Grain wrap
Prepare the apple by washing, peeling and coring it. Either slice the apple into thin slices (my children’s favorite) or place the apple into a mini food processor to chop (my personal favorite). If you chop the apple in a mini food processor stir the cinnamon into the apple. If you slice the apple, simply add the cinnamon into the peanut butter spread. Create the peanut butter spread my stirring together the honey and peanut butter.
Spread the peanut butter mixture onto the wrap, add the apples and fold like a burrito. It’s a great lunch alternative or healthy breakfast option.
Peanut allergies: Replace the peanut butter spread with the following spread; 1 tablespoon of whipped cream cheese, 1 tablespoon vanilla low fat yogurt, 1 teaspoon honey and 1/8 teaspoon vanilla extract.

It’s a great option for the non-sandwich eaters & it’ offers a low sugar jelly replacement using fresh fruit. We tend to use it seasonly, which is great because it doesn’t over wear it’s welcome at the counters & in the lunch box. Enjoy & have a great weekend,
