I have these little kitchen challenges I give myself & one of them would be seasoning ground turkey which includes creating various flavored turkey burgers, because alone, plain turkey burgers are pretty bland & don’t make the cut over here as far as taste buds go. The challenge in part is ground turkey, but it’s mostly about creating and discovering recipes that will feed all five of my picky crew eaters. My middle guy has somehow become the most fussy of the eaters at my counters & he’s a teenager; yup, as I always say (and it’s true), sometimes it’s easier to feed a toddler than it is a teenager. My most recent combination that received a ‘thumbs up’ approval from the entire fam was a Chipotle Turkey Burger with Guacamole = TOTAL YUM!
My kids & hubs love the Chipotle chain restaurant, but I have to brag & say that they actually like my guacamole better = heart whelming moment for any mom (LOL)! Although I know deep down it’s probably just what they were raised on & what they are used to, but I’ll take the complement from them & not let them in on my little secret…after all, there’s enough other stuff that they actually do complain about…haha….
Here’s our recipe to share, it’s a definite winner & we hope you enjoy as much as we do :)!
Chipotle Turkey Burger by Jodie Fitz
2 lbs. ground turkey
1/2 cup Vidalia onion, finely chopped
1/2 cup whole wheat seasoned bread crumbs
1 1/2 teaspoons onion powder
1 teaspoon salt
3/4 teaspoon garlic powder
3/4 teaspoon chipotle* spice seasoning
Guacamole (see recipe below)
Mix the ground turkey together with the Vidalia onion, seasoned bread crumbs, onion powder, salt, garlic powder and chipotle seasoning until all of the ingredients are fully mixed. create turkey burger patties from the meat mixture and grill over medium heat until they are fully cooked, flipping the burgers occasionally throughout the cooking process.
Just before removing the burgers from the grill, top each turkey patty with a thin layer of sharp cheese and let it melt. Top each burger with fresh guacamole (see our recipe below) & serve on your favorite roll. This week we served ours on a low-fat roll with sweet corn & watermelon as we squeeze in all of those scrumptious summer seasonal finds before we have to wait until next year.
*I used the Chipotle seasoning from McCormick’s Gourmet line.
Fitz Family Guacamole
1 Roma tomato
2 tablespoons cilantro
2 tablespoons finely chopped sweet onion
1 tablespoon lime juice
1 clove garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
Cut the avocado lengthwise. Remove the seed and remove the fruit from the rind and place it into a bowl. Wash the Roma tomato & remove the ends. Finely chop it up and add it to the avocado along with the onion, crushed clove of garlic, cilantro, lime juice, salt, pepper & onion powder. Mash the ingredients together with an avocado tool (see below) or by cutting it together with two forks, but always by hand. Jodie Fitz
