20 minute dinner with Black Bean Burgers and Guacamole

Black Bean Burger

I recently realized my formula for meal planning comes with three strategies:

1. I streamline whenever possible.

2. I have a whole lot of ‘make ahead’ meals to keep my busy nights easy. I prep them on weekends and often have them in the freezer.

3. I have a list of emergency meal supplies in the pantry that only take me 20 – 30 minutes to prep.

These Black Bean Burgers are one of my emergency fallback meals that my entire family LOVES! It’s not just about the burger, it’s about the entire combo & this black bean burgers goes great with guacamole & sharp cheese. We love it served on a traditional FlatOut® Fold-it®.

It’s a must try….

Black Bean Burgers by Jodie Fitz

2 – 14.5 oz cans of black beans, drained
1/2 sweet onion, finely chopped
1/2 cup seasoned whole wheat bread crumbs
1 large egg
1teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 teaspoon red cayenne pepper

Mash the drained beans in a bowl with a spoon or avocado tool. Add the onions, bread crumbs, egg, onion powder, garlic powder, salt, black & cayenne peppers to the black beans. In a cutting fashion, mix all of the ingredients together.

Form the mixture into burger styled patties.

How many burgers does the mix make? This mix will make approximate 5 burgers.

Cook the patties in a skillet styled pan coated with non-stick cooking spray, covered, over medium to low heat. Cook until each side is toasted brown.

Serve with sharp cheese melted on top with a spread of guacamole (below) on a FlatOut® Fold-it®.

Do I double the mix? Yes I do! And then I take the extra patties, wrap them individually in parchment paper & freeze them for a future meal. It’s a fallback & a freeze ahead meal; double awesomeness.

Guacamole by Jodie Fitz

2 avocado’s
2 tablespoons cilantro
2 tablespoons finely chopped sweet onion
1 tablespoon lime juice
1 small clove garlic
1/2 teaspoon pepper
1/2 teaspoon onion powder
1/4 teaspoon sea salt
Grape tomatoes (optional)

Remove the skin & pit of the avocados. If you are adding grape tomatoes to the mix, cut them into quarters. We use both the red & the golden, especially in this recipe.

Add the cilantro, sweet onion, lime juice, garlic, pepper, onion powder & sea salt. Using an avocado tool, or fork, mash all of the ingredients together to make your guacamole.
