Chicken Burrito Bowls Served for an Easy Dinner

Chicken Burrito Bowl

Chicken Burrito Bowls are our new dinner love! This recipe was created as a request from my daughter. After a little experimentation & tweaking, we have discovered that we love this smorgasbord of yumminess.

Everyone enjoyed building their own burrito bowl with all of the favorites, which makes it a winning combo for each individual.

Chicken Burrito Bowls with Jodie Fitz

Our Burrito Bowl bar at home includes:

Brown Rice (recipe below)
Corn
Black Beans (canned, drained & rinsed)
Sautéed Peppers & Onions (w just a bit of light olive oil)
Salsa
My Special Chicken Recipe (see below)
Shredded Monterey Jack cheese
My Guacamole Recipe (see below)
Sour Cream
Taco Sauce

Jodie’s Rice Recipe for Chicken Burrito Bowls:

2 cups chicken broth
1 cup brown rice
½ cup water
1 ½ teaspoons butter
1 teaspoon onion powder
½ teaspoon salt
1/teaspoon white pepper

Melt the butter in a saucepan. Add the rice & spices once it’s melted & stir the ingredients together. Add the chicken broth & water to the mixture. Stir. Cover & bring the rice to a boil. Reduce the heat & cook on simmer until the liquid is fully absorbed.

Note: With my family of 5 we will double this recipe. Any leftovers are gobbled for the next day’s lunch!

Jodie’s Chicken Recipe for Chicken Burrito Bowls:

2 pounds boneless, skinless chicken
1 teaspoon onion powder
¾ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon chipotle chili pepper
½ teaspoon salt
¼ teaspoon chili powder
¼ teaspoon white pepper

Preheat the oven to 375 degrees.
Mix the spices together. Fully coat the diced chicken with the spices.

Rinse the chicken breast & pat dry (with a disposable paper towel). Dice the chicken breast into small pieces.

Cover a baking sheet with foil (dull side facing up). Spread the chicken on the baking sheet. Cover the chicken with a piece of parchment paper cut to fit the size of the pan & bake for 20- 25 minutes.

Note: Again, with my family of 5 we do double this recipe. The extra chicken can be used up with leftovers, in quesadillas or turned into a very tasty chicken salad.

Jodie’s Guacamole Recipe

2 avocado’s

2 tablespoons cilantro

2 tablespoons finely chopped sweet onion

1 tablespoon lime juice

1 small clove garlic

1/2 teaspoon pepper

1/2 teaspoon onion powder

1/4 teaspoon sea salt

Grape tomatoes (optional)

Remove the skin & pit of the avocados. If you are adding grape tomatoes to the mix, cut them into quarters. We use both the red & the golden, especially in this recipe.
Add the cilantro, sweet onion, lime juice, garlic, pepper, onion powder & sea salt. Using an avocado tool, or fork, mash all of the ingredients together to make your guacamole.

SIMPLIFY….

SAVE TIME by purchasing salsa, guacamole & pre-shredded cheese at the grocery store. If you are really in a time crunch, although not as good, you can pick up a rotisserie chicken at the store & shred the meat.

Have it Ready…

Weeknights are BUSY! And at the end of a long day, no one wants to slave over a
l-o-n-g recipe. There are two ways to have the chicken ready for your dinner ahead of time:

1. You can actually make the chicken on the weekend & freeze it fully cooked, ready to thaw & simply warm on a busy night.

2. Prep the chicken by rinsing, drying & dicing the chicken. Then add the spices as directed above & freeze the seasoned chicken in a freezer bag or other airtight storage container. Then simply let it thaw & cook it while your rice is cooking.

…..Weekend grocery days also make great prep days to make your weekdays easier!
