Mmmmm, snacks anyone? Trade in the tortilla chips & try zucchini chips with this homemade mild, but sweetly delicious salsa combo. It’s great for entertaining or afternoon family snacking….

Zucchini Chips by Jodie Fitz

1 zucchini, medium sized
1 cup whole wheat seasoned bread crumbs
1 ½ teaspoons onion powder
¾ teaspoon garlic powder
½ teaspoon sea salt
1/8 teaspoon black pepper
1 egg
2 tablespoons of milk
Olive oil, light

Preheat the oven to 400 degrees.

Wash & cut the zucchini into thin slices discarding the ends. Stir the seasoned bread crumps, onion powder, garlic powder, sea salt & black pepper together in one bowl. Whip the egg & milk together in another bowl.

Dredge each zucchini slice in the egg wash & then coat with the breadcrumb mixture. Place each slice onto a baking sheet generously coated with olive oil. Once the dredging is complete, lightly baste the top of each zucchini slice with olive oil.

Bake for approximately 20 minutes, until golden brown & crispy.

Note: Depending on the size of your zucchini chips, you may need to make more egg wash and/or breadcrumb mixture.

Homemade Sweet Mild Salsa by Jodie Fitz

½ cup of grape tomatoes
½ cup orange bell pepper
¼ cup Shuman Produce ® Vidalia onions
3 tablespoons cilantro, fresh
1 small clove garlic, fresh
½ teaspoon Balsamic vinegar

Place the tomatoes, bell pepper, Vidalia onions, cilantro & balsamic vinegar into a mini chopper. Pulsate until chopped to the consistency desired. Serve with zucchini chips.
