Zucchini Bread Sandwiches

Every year I hear from many non-sandwich eating kiddos (and their parents) when I’m traveling as they search for lunch box packing ideas. In fact, one of my own is not a typical sandwich lover when it comes to opening her lunchbox. She has forced me to get creative and at the same time I want to find ways to keep life simple during the weekday rush.

There are many alternatives to traditional sandwiches and zucchini bread sandwiches can be one of them. It’s a great recipe to get the kids in the kitchen to make on the weekend, appeal to their tastebuds and keep it easy for packing on the busy days once it’s made ahead of time and waiting for you to slice and pack.

Zucchini Bread Sandwiches by Jodie Fitz

3 cups of shredded zucchini
4 Pics eggs, large
1 cup organic sugar
2/3 Price Chopper brown sugar
4 oz. Price Chopper cinnamon applesauce
2 teaspoon Price Chopper vanilla extract
1 cup white whole wheat flour
2 cups unbleached all-purpose flour
2 teaspoons Price Chopper baking soda
1 teaspoon Price Chopper sea salt
1 ½ teaspoons Price Chopper cinnamon
½ teaspoon Price Chopper baking powder
1 cup Price Chopper raisins

Preheat the oven to 350 degrees.

In a large bowl, add the shredded zucchini, eggs, sugars, cinnamon applesauce and vanilla extract together. Using an electric mixer, mix the ingredients together.

In a separate bowl add the flours, baking soda, salt, cinnamon and baking powder together. Stir the dry ingredients together with a fork. Slowly add the dry ingredients to the wet ingredients and continue to mix them together with the electric mixer until everything is mixed well.

Stir in the raisins.

Grease the bottom of two bread pans or a 13 x 9 glass-baking dish. Pour the batter evenly into the two bread pans or all of it into the 13 x 9 pan. Bake for 50 minutes. Insert a toothpick into the center to make sure the bread is fully baked.

Let it cool before slicing.

Make mini sandwiches with the spreads below:

Maple Spread

2 tablespoons whipped cream cheese
1 teaspoon maple syrup

Stir the ingredients together.

Honey Spread

2 tablespoons whipped cream cheese
