Kids in the Kitchen making Breakfast Quesadillas for Father’s Day

 

Annabelle joined me at the Price Chopper Kids Cooking Club Studio to help make a Breakfast Quesadilla to serve. This breakfast is great any time of the year & provides a lot of opportunities for kids to learn about eggs, stovetop safety and quesadilla making yum. But, it also makes a great breakfast to share with dad on Father’s Day and we even included a fun tip on how kids can turn it into a baseball for the sports enthusiast in your household. Breakfast Quesadilla by Jodie Fitz

2 oz. – 3 oz. Price Chopper sharp cheese, finely shredded

2 – 3 tablespoons salsa, mild or medium

2 – flour tortillas, small size

1 Price Chopper egg, large

Taco sauce, mild or medium

Price Chopper non-stick cooking spray

Price Chopper butter, room temperature

Coat a small frying pan with the non-sticking cooking spray & cook an egg over hard.

On a clean surface begin to layer the breakfast quesadilla by sprinkling half the cheese onto one side of the flour tortilla. Add the cooked egg. Add the salsa. Add the remaining cheese. Top off the quesadilla with the second tortilla.

Add a light layer of butter to the top of the tortilla stack. Place the uncooked quesadilla into a clean skillet & cook over medium to low heat until that side is golden brown and the cheese on that side is melted. Carefully butter the next side of the quesadilla and flip the entire quesadilla and toast the other side melting the rest of the cheese.

Remove & serve!

Cooking Over Hard Eggs: 
 An over hard cooked egg is fried, flipped, and fried again with the yolk broken until both the white and the yolk are completely cooked.

For the Baseball Lover: Fill a cake decorating utensil or a small bottle that’s actually used for melting & writing with chocolate with taco sauce. Draw lines for a baseball on top before serving.
