Check out these blueberry pancakes! They are deliciously sweet and don’t need any syrup. If you have kiddos these are great for summer sleepovers, ‘wowing’ your own kids at breakfast and if you don’t, then make them just because you’re in the mood for yourself!
I know I’ve said this before, but my favorite way to make pancakes is to DOUBLE or TRIPLE the batch. I let them all cool and then I wrap the leftovers individually in parchment paper or waxed paper & pop the pancakes into a freezer bag and put them in the freezer. Then, the kids can take them out, pop them in the toaster & have a deliciously fun breakfast any day without the fuss and mess! I’m always finding ways to streamline the process and make life a little bit easier…
Blueberry Pancakes by Jodie Fitz
1 ¼ cup all-purpose, unbleached flour
1 cup milk
¼ cup brown sugar
4 oz. cinnamon applesauce
1 tablespoon baking powder
1 teaspoon vanilla extract
¼ teaspoon sea salt
1 cup blueberries, fresh
Rinse the blueberries and let dry.
Beat the egg in a bowl with a whisk until fluffy. Using a whisk, stir together the egg, flour, milk, brown sugar, applesauce baking powder, vanilla extract and sea salt.
Using a spoon stir in the blueberries.
Cook the blueberry pancakes on a preheated griddle that has been treated with non-stick cooking spray or butter. Cook the pancakes over low to medium heat on one side until it’s toasted and the edges begin to change and the center starts to bubble before flipping to cook the other side and middle of the pancake.
Note: These are delicious alone and do not need syrup. Syrup is optional!
My Favorite Pancake Size? I like to use the medium sized cookie scoop to make pancakes = the perfect size.
