Do you have teens? Do they say they’re not hungry and don’t really want breakfast? I am living through this scenario for the second time. It can be a challenge to hold their interest and so I’m trying to mix it up with something new at least once a week. My rule? Don’t leave the house without breakfast!
Breakfast Burrito’s is a recipe that does appeal to my teenage boys and so, although I don’t make it every day or even every week, it does make a nice treat every once in awhile. I love to make these on a Sunday so that we have them for the first part of the week; it’s not a quick & easy fix. This recipe is also great to make for weekend fun or when there’s company in the house!
Breakfast Burrito’s by Jodie Fitz
1 red bell pepper (NuVal 96)
1 green bell pepper (NuVal 96)
2 tablespoons Price Chopper olive oil, light
2 Price Chopper eggs, large
8 oz. Cabot Monterey Jack jalapeno cheese, shredded
2 Price Chopper flour tortillas
Taco sauce, mild
Price Chopper Nonstick cooking spray
Wash, remove the seeds and cut the peppers into thin strips. Sautee the peppers in the olive oil until the peppers are fully cooked. Set the cooked peppers aside.
Cook the eggs in a scrambled fashion without the milk. Preheat the oven to 375 degrees. Divide the eggs in half and add them to the center of the tortilla round. Add two tablespoons of cheese to each burrito and top with 4-5 slices of the cooked peppers. Roll the tortilla in burrito fashion and place them in a glass baking dish coated with the nonstick cooking spray, seam side down. Top the burrito’s with a tablespoon of taco sauce over each burrito. Add one additional tablespoon of cheese over the top of each burrito. Bake for approximately 15 minutes until the tortilla is crispy and the cheese has melted. Serve with a fruit salad.
Note: The peppers can be stored in a proper storage container in the refrigerator for use within three days. Or, the additional peppers can be frozen and thawed for future use.
