Alarm clocks are set, backpacks are full & it’s time to pull out the Back to School Breakfast Recipes for busy mornings. Since we’re all looking to make sure the kids are fed on their way to school, but also often looking for a new twist to get them to eat well-rounded, why not grab some plain old eggs, whip them up & turn them into Flying Saucers for an easy fix that’s tasty and fun?
So, pull out those drawers, open that refrigerator get out a spatula, some eggs and a few other key ingredients (see below). Don’t forget to invite the kids & their taste buds for this deliciously easy recipe for a weekend trial. If they like it, you’ll be ready to fly them out the door with a full belly for school. Not to mention, they are great for parent’s bellies too!
Note: Once you make your flying saucer, let it cool slightly and then the entire flying saucer can be picked up & eaten if you don’t want to use a fork & knife making eating on the run just a little bit easier. Here’s how easy this recipe is to make;
Flying Saucer for Breakfast by Jodie Fitz
1 honey wheat pita
2 -3 tablespoons shredded sharp cheese
Heat a griddle style pan over low heat. Using a round cookie cutter cut out the center of the pita. Butter both sides and place one side onto the pan and begin to toast it for a minute or two. Add a little bit of butter to the center opening & crack an egg into the center. Break the yoke with a spatula. Season the egg with a dash of salt, pepper, onion powder & garlic powder. Let the egg cook until it looks almost done.
Flip the flying saucer in one complete piece, Season the egg with a dash of the spices on the next side. Add the shredded cheese & cook the egg the rest of the way, melting the cheese.
Serve it with a side of fresh fruit.
