Peanut Butter & Banana Parfait

More easy breakfast bites & snacks are on the brain this week…come to think of it, they are in the thought process every week. Once a mom, meal planning becomes a required skill, right?

However, I can’t say that I have always found meal planning easy or enjoyable ~ haha. It’s a task that I choose to make as fun as possible for myself & those I love. The five different tastebuds & personalities along with the ever changing schedule of my household sometimes make the process a little tricky.

So, typically, unless a special occasion, you will almost always find something quick, easy & yummy at my counters. Here’s a parfait fit for breakfast, possibly lunch & definitely a snack to try…

Peanut Butter Banana Parfait by Jodie Fitz

6 oz. low-fat vanilla yogurt

1 tablespoon peanut butter

1/2 teaspoon cinnamon

2 tablespoons granola cereal

1/2 banana

Fold the yogurt, peanut butter & cinnamon together.

Cut the banana into thing slices.

Scoop half of the yogurt mixture into a parfait glass and add 1 tablespoon of the cereal & half of the bananas.

Add in the remaining yogurt and top it off with the remaining cereal & banana slices.

Peanut Butter: Make sure it’s room temperature before making the parfait (ours is organic & is usually coming out of the refrigerator).

Nut Free: Use the sunflower seed butter or soy butter as an alternative and check the labels on your granola!

Dairy Free: Use the vanilla coconut milk based yogurt.
