Berry Breakfast Tacos are a great way to incorporate fresh or frozen fruit into recipes. This recipe is kid tested and approved. It’s a breakfast the entire family will enjoy.
Berry Breakfast Tacos
Berry Breakfast Tacos are one of my favorite recipes. I especially love serving them in the spring. They are not only delicious and easy to make, but colorful and hopeful like the spring. Berries scream ‘SUMMER is COMING’ and when you live in the northeast, you live for those short, but appreciated summer months.
I make these tacos with the fresh frozen berry medley mix that can be found in your local supermarket in the freezer aisles. I definitely use the fresh frozen, no sugar or syrup added version.
In fact, if you have leftover fresh berries you are not planning to use, simply freeze them. It’s simple! Wash them and let them dry. If you are freezing strawberries be certain to hull them. Place them on a baking sheet lined with parchment paper and freeze them for several hours. Then put the frozen berries into an airtight container or freezer bag to keep in the freezer until you are ready to use them.

Berry Breakfast Tacos
Ingredients
- 1 cup mixed berries, frozen
- 1 traditional flatbread or tortilla, whole grain preferred
- 1 ½ teaspoons tapioca, uncooked
- 1/2 teaspoon cinnamon
- 1 – 2 tablespoons whipped cream cheese
- 1 tablespoon honey
Instructions
Non-stick cooking spray
Pre-heat the oven to 375 degrees.
Stir the frozen berries, tapioca and cinnamon together.
Stir the cream cheese and honey together.
Spread a thin layer of the cream cheese and honey mixture onto half of the flatbread or tortilla. Add the berry mixture on top of the cream cheese spread. Fold the flatbread in half. Place it onto a non-stick baking sheet sprayed coated with the non-stick cooking spray.
Bake for 15 - 20 minutes.

Topping it Off: I like to top off my berry breakfast tacos with a yogurt glaze. Here is my recipe;
Yogurt Glaze by Jodie Fitz
3 oz. low-fat vanilla yogurt
1 tablespoon low-fat milk
1 tablespoon honey
Stir the yogurt, honey and milk together. Drizzle the yogurt glaze over the Berry-licious filled flatbread or tortilla & serve warm.
Make the Morning a Little Easier: Bake ahead, warm in a toaster oven & top with the glaze in the AM. Or, make the taco portion with the frozen berries & freeze the entire taco to bake up & top with the yogurt in the AM.
When freezing the entire breakfast taco, place the tacos on a baking sheet lined with parchment paper & pop them in a freezer for approximately an hour. Wrap each taco individually in parchment paper & place in a freezer bag.
