Black Rice Side Dish with Corn and Tomatoes

Black rice with corn, tomatoes and cilantro is a delicious side dish.  This side dish recipe is great for entertaining or any time of the week.  It’s an easy recipe that’s full of flavor and healthy ingredients.

Black Rice Side Dish with Corn and Tomatoes

This black rice side dish is a new family favorite.  It’s bursting with flavor because it’s cooked in vegetable broth along with spices that make the main ingredient base totally delicious.  Toss in the fresh cooked corn kernels, fresh diced grape tomatoes and fresh chopped cilantro and you have the perfect finishing touch.

I often serve this with my basic seasoned salmon and it’s a fantastic dinner combo.

Yes, this recipe is pretty simple.  Recipes don’t have to be complex to be good, they just need to have a good layer of flavor and this recipe checks all of the boxes.

Black Rice Side Dish with Corn and Tomatoes

Ingredients

  • 4 cups vegetable broth
  • 2 cups black rice
  • 2 tablespoons butter
  • 1 teaspoon onion powder
  • ¾ tsp sea salt
  • ½ teaspoon garlic powder
  • ¼ tsp white pepper
  • 1 pint grape tomatoes quartered
  • 1 pound of corn, frozen
  • Fresh cilantro

Instructions

Pour the vegetable broth into a saucepan. Bring it to a boil. Add in the black rice.

Then add in the butter, onion powder, sea salt, garlic powder and white pepper into the pan. Stir until the butter has melted and the spices have mixed in with the broth. Reduce the heat, cover the black rice and let it cook as directed on the package.

Cook the corn in water. Pour out the excess water and set the corn aside.

Rinse and dice one pint of grape tomatoes and set them aside.

Chop fresh cilantro, set aside.

Once the black rice has full cooked, remove it from the heat and let it set for 10 minutes.

Place the black rice into a bowl for serving, toss it with the corn, tomatoes and most of the cilantro. Leave a little of the cilantro out to sprinkle on the top of the black rice dish.

Cold or Warm?  This recipe can be served room temp or warm.  My personal favorite is warm.

Size of the Side?  I feed 4 – 6 with this recipe with leftovers, because we LOVE leftovers for lunch.  If you have a smaller crowd, cut the recipe in half.

Main Dish or Side?  This recipe can be served as a main dish, especially if you love vegetarian eats.

Black rice?  This rice has two knick names.  It is also known as the ‘forbidden rice’ or the ’emperor’s rice’ because it was sought after for it’s health properties and once reserved for the Chinese Emperor only and forbidden from others.  It is hight in it’s antioxidant properties.  You can learn a little more about this yumminess by clicking here.
