blueberry pancakes & blueberry glazeI love blueberry pancakes, I love experimenting & I love all of the amazing fused products at Saratoga Olive Oil Co.  One of our family favorites is their blueberry fused balsamic vinegars.  In fact, I love it simply alone drizzled on one of my favorite summer recipes, a peach grilled salad, and in various recipe combos.  I have actually shared some kid/family cooking classes at the Saratoga Olive Oil Company in the past using their products & one of the recipes we made was Blueberry Pancakes with a Blueberry Glaze on top.  Below is a recipe & even better, a link to a Give-A-Way of some of Saratoga Olive Oil’s amazing products; the basket includes the blueberry fused balsamic = SO YUMMY!

Blueberry Pancakes by Jodie Fitz

1 egg

1 1/2 cups flour

1 cup milk

4 oz. applesauce

3 tablespoons honey

1 teaspoon vanilla extract

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon cinnamon

2 cups blueberry, frozen

Saratoga Olive Oil’s Butter fused Oil

Using a whisk, mix together the egg, flour, milk, applesauce, vanilla extract, baking powder, salt, honey and cinnamon.  Mix until the ingredients are mixed together well.  Fold in the frozen blueberries.  Heat a griddle pan & coat it with the butter fused olive oil to prevent the pancakes from sticking.  Cook the pancakes over medium – low heat.

Blueberry Glaze by Jodie Fitz

1/2 cup Saratoga Olive Oils blueberry fused balsamic

3 tablespoons honey

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/2 teaspoon cocoa powder

Whisk together the blueberry fused balsamic, honey, vanilla extract, cinnamon & cocoa powder in a sauce pan.  Heat the mixture over low heat & cook, stirring frequently, until the vinegar has reduced 50%.  Let the glaze set while you are cooking the pancakes to allow it to thicken slightly and create a delicious syrup to drizzle on top.  

This syrup is equally delicious served on vanilla frozen yogurt or ice cream topped with a few fresh blueberries.
