It’s time for back to school routines & over at the Price Chopper Kids Cooking Club I had all kinds of help in the kitchen getting ready to share some quick & easy recipe fun for September.  Logan helped me get ready for breakfast on the run with some very scrumptious Breakfast Burritos. One thing I learned about Logan is that he likes his Breakfast Burritos Grande Styled. Check out Logan’s breakfast burrito grande in the video.

As much as I love Breakfast Burritos, they are not a recipe that I can tackle on a school morning.  However, I prep them two different ways in advance to make them easy to whip up on one of those crazy busy mornings.  Sometimes I prep the meat on Sunday and shred the cheese and have everything in storage containers so that we can simply scramble the eggs, wrap everything together & pop them in the oven for a 20 minute serve (see all of the directions below).  But, even more often, I prep all of the ingredients, fill my burritos and freeze them individually so that all we have to do is top them off with a little shredded cheese, bake them up, grab & go for a 10 minute quick fix!

 Turkey breakfast sausage links, cooked

Turkey bacon, cooked

Price Chopper Ham, cooked

8 Price Chopper eggs, large

8 oz. Price Chopper sharp cheddar, shredded

6 – tortilla wraps

1 tablespoon Price Chopper canola oil

1/4 teaspoon onion powder

1/8 teaspoon Price Chopper black pepper

Mild Salsaback to school breakfasts

Non-stick cooking spray

 Scramble the eggs together in a bowl with the onion powder & black pepper. Cook them in scrambled fashion using the non-stick cooking spray.

 After you have cooked the sausage, cooked the bacon & browned the cooked ham, simply cut them into small-diced pieces.

 Fill the center of each burrito with eggs, meat, salsa & approximately 2 tablespoons of cheese. Roll them as you would a burrito.

 If you are going to cook them right away, place them seam down, in a glass-baking dish that has been coated with the non-stick cooking spray. Baste the top of each burrito with the canola oil & top them with shredded cheese. Cook them in a pre-heated oven at 375 degrees for approximately 10 minutes; until they are golden brown on the edges. Serve warm with a side of fresh fruit.

 If you are going to freeze the burritos, place each burrito you have just rolled on a baking sheet that is lined with parchment paper. Place the tray of burritos into the freezer and let them freeze for at least one hour. Remove the tray, wrap each one individually with parchment paper and place them in an airtight freezing container or a Price Chopper Snap and Seal freezer bag. When you are ready for your burritos, simply remove them for the freezer and let them set while you are heating the oven. Follow the direction above to baste, top with cheese & bake before serving.  [googleplusauthor]

    1. In the states you can get a version of bacon made out of turkey? Do you not have that in Australia?
