Raisin Poppy Chicken Salad

Last weekend friends invited us out on their boat.  There were 4 adults and 5 kids on one boat, which certainly could fit us all, but this is what I found amazing…..put my kids in our house, with their own rooms and own spaces and they will find a way to drive each other crazy.  Put us all on a boat with confined courters and everyone was fabulous; well minus a little teasing, splashing and threats of occasional dunking…

Some how anything they dish doesn’t even matter when you are out on a boat with friends.  It was definitely an AHHHHH moment kind of day.  I was in charge of bringing Chicken Salad and brought both a regular and my friend Lisa’s favorite, my raisin poppy Chicken Salad, which is deliciously easy!

Raisin Poppy Chicken Salad by Jodie Fitz

2 1/2 lbs. Grilled Chicken

3/4 cup Raisins

2 oz. Sliced Almonds

1/4 cup finely chopped Celery

1 cup Lite Poppy Seed Dressing

Cut the chicken into small pieces.  Add the raisins, almonds, chicken and celery into a bowl and toss it together.  Add the poppy seed dressing and stir until all of the ingredients are evenly distributed.

Grilled Chicken: Slice the chicken in half lengthwise. Pound the chicken.  Season the pieces with salt and pepper and either grill it or broil it until it is fully cooked.

My Regular Chicken Salad Mix: 2 1/2 lbs. grilled chicken, 2 tablespoons finely chopped vidalia onions, 1/4 teaspoon garlic powder, 1/2 teaspoon onion powder, salt & pepper to season, Cains Mayonnaise (add enough mayo for the texture desired).

    1. We LOVE chicken salad here too! It’s a definite staple for left-over grilled chicken in the summer :)! And, you have to try it with the light poppy seed dressing, it’s a definite de-lish! 🙂

      I used to eat eggs and asparagus all by my lonesome, but the kids discovered that one & now I better make extra or there aren’t any for me…
