Years ago my best friend taught me a trick on eating bananas and peanut butter. The combination shared has morphed ever so slightly into Crunchy Banana Bites at our house and we love these for an after school snack or even part of a breakfast combo. Here’s one of snack friendly recipes to share;
Crunchy Banana Bites by Jodie Fitz
¾ cup Grape-Nut Cereal
1/3 cup peanut butter
1 tablespoon honey
1 tablespoon wheat germ
½ teaspoon cinnamon
1/8 teaspoon vanilla extract
Place the peanut butter in a glass bowl and microwave it for at 30 seconds on high. Stir the honey, wheat germ, cinnamon and vanilla extract into the peanut butter. Peel and slice the banana. Fold the banana pieces into the peanut butter mixture so that they are fully covered with the peanut butter mixture, but still banana rounds. Roll the peanut butter covered banana slices in the Grape-Nut cereal so that they are fully coated. Place the banana rounds on a plate and let them set in the refrigerator.
Make Ahead: This is a great recipe to make the night before and have ready to serve in the morning. Simply pop them in the refrigerator to keep. In fact, after they’ve been refrigerated they are great to pop into a container or Zip-loc bag to take and go.
Peanut Butter: I do use a natural/organic peanut butter when I make this recipe. However, if you aren’t using an organic all natural, you may want to decrease the amount of honey as many other peanut butters can be sweeter tasting due to their ingredients.
