Lately things over here at the homestead have been a little on the busy side of the fence. So, I’m all about the quick & easy! This week with company coming & going like a revolving door, I’m pulling out all of the easiest, but tastiest tricks that I can share. These Cheesy Pesto Bread Bites are always a hit and perfect for a snack or as appetizers. They’re SCRUMPTIOUS when served fresh out of the oven and so easy to make that you can whip them up while visiting with company. Obviously, can have them prepped ahead of time & ready to pop into the oven too; either way they’re equally delish. Entertaining should be about ‘no fuss’ and ‘little mess’, which makes this recipe a perfect try.
Cheesy Pesto Bites by Jodie Fitz
Olive oil (virgin or light)
Golden grape tomatoes
Pre-heat the oven to 375 degrees,
Thinly slice the French bread (approximately 3/4 inch).
Stir 1/8 cup of olive oil together with 1 tablespoon of pesto sauce. NOTE: This will not cover an entire loaf of bread, but it is the measurement to repeat. The amount you need will depend on how many slices you are making to serve & how large your French bread actually is in diameter.
Dice the tomatoes.
Thinly slice the fresh mozzarella.
Place the cut French bread onto a baking sheet coated with non-stick cooking spray. Baste the top of them with the pesto mixture. Add a layer of diced golden tomatoes. Top them with a thin slice of fresh mozzarella.
Bake the Cheesy Pesto Bites for approximately 8 minutes; until the bread is toasted and cheese is melted.
Place the baked Cheesy Pesto Bites on a serving platter & lightly drizzle with a balsamic glaze before serving.
