Easy Breakfast Pizza Recipe

This easy breakfast pizza is great for entertaining or any day of the week. It’s even simple to make ahead of time for a delicious reheat, which is always good for busy weekday moments. Check out the recipe and all of my time-saving, reheat tips below. Then follow the trail to another recipe loaded with breakfast flavor.

Easy Breakfast Pizza
Ingredients
- Flatbread or pizza crust
- 1 cup fresh baby leaf spinach, finely chopped
- ½ cup cooked ham, diced
- 4 large eggs
- 4 oz. shredded sharp cheese
- 1 tablespoon olive oil
- Sea salt
- Black pepper
- Nonstick cooking spray
Instructions
Pre-heat the oven to 375 degrees.
Cook the eggs in a scrambled fashion over medium heat in a pan coated with nonstick cooking spray.
Stir the chopped spinach and olive oil together.
Baste the flatbread or pizza crust with the spinach and oil.
Evenly spread the ham and over the top of the crust.
Add a little salt and black pepper to taste.
Top the pizza with the cheese.
Bake the pizza for 20 – 25 minutes; until the dough is crispy and the cheese is fully melted.
Notes
Cook the Eggs by Microwave: Don’t feel like using the stovetop? The microwave is a solution!
Simply whip the eggs together. Place them in a butter coated glass dish and microwave them on high for one minute. Remove the dish from the microwave with an oven mitt and stir. Continue to cook the eggs at one-minute intervals, stirring in between each minute, until the eggs are fully cooked. Always remove them with an oven mitt.
On the Run: Prep the pizza the night before and bake it fresh in the morning or bake the entire pizza the night before, slice and heat in the morning. Note: It’s always a little crispier if you reheat in a toaster oven or oven, the microwave can be a little soggy.
Crusts: You can use a flatbread, traditional pizza dough or the FlatOut pizza crust; I love the size and shape of it for this recipe.
