I am a HUGE caprese salad lover! It’s one of my ‘go-to’ recipes for myself, when I’m out and when I’m entertaining. I love it, because it’s one of those recipes that’s quick and easy, but absolutely scrumptious. And what’s better? When I can find a recipe I can prep ahead, share with friends & relax and enjoy their visit.
This share, I used a simple spinach base, fresh tomatoes, fresh mozzarella and a seasoned chicken (recipe below). I prepped everything so that I just had to skew it before serving & drizzled it with my summer favorite blueberry infused balsamic vinegar glaze. I often add in fresh basil to the skewers and use just a plan balsamic glaze or dressing.
Easy Caprese Chicken Rub by Jodie Fitz
5 pounds of boneless, skinless chicken
1 tablespoon freeze dried basil
1 teaspoon sea salt, ground
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon coarse pepper
Start with approximately six pounds of boneless, skinless chicken breast. Slice the chicken in half lengthwise. Pound the chicken.
Add the basil, salt, onion powder, garlic powder and coarse pepper together. Rub both sides of each chicken piece. Grill the chicken.
