Peaches are coming into season and I LOVE these sweet and juicy fruits especially in cooking! We have become big parfait lovers and when I make yogurt parfaits and put them in bell/canning jars and have them waiting in the refrigerator they are a H-U-G-E hit and disappear pretty quickly. So, it was a natural instinct for me to take peaches and add them into a Peaches and Cream Parfait. Not only do I love cooking with peaches, I love then even more when they are mixed with blueberries. So, you’ve got it, there’s blueberries in my EASY peaches and creams parfait. Peaches and Cream Parfaits by Jodie Fitz
2 peaches, ripe
3 tablespoons water
1 tablespoon brown sugar
½ teaspoon cinnamon
6 – 6 oz. Greek vanilla yogurts
1 ½ cups blueberries
Granola (your favorite)
6 – 8 oz. bell jars
Wash and peel the peaches. Remove the fruit from the seed and dice it
Place the diced peaches, water, brown sugar & cinnamon in a saucepan. Cook the peaches over medium to low heat. Stir frequently and cook until the peaches are softened.
Let the peaches cool completely.
Place one 6 oz. Greek yogurt into each of the six bell/canning jars. Equally divide the peaches into each jar. Then equally divide the blueberries into each jar. Top each jar off with your favorite granola.
Keep the parfaits in the refrigerator until they are ready to serve.
P.S. my daughter loves these in the lunchbox too.
