Easy Summer Quinoa Salad Recipe perfect for a picnic

This Quinoa Salad Recipe is perfect for a dinner side dish, to bring along on a picnic or to serve at an upcoming gathering. The black beans, golden tomatoes, cucumbers ,cilantro & combination of seasonings mixed with the quinoa is the perfect blend of flavors.

Although I had already been taste testing this recipe, I brought it to our annual family gathering for more feedback & it got a bigger stamp of approval from my mom & her sisters who tell EVERYTHING like it is.

I love all the seasonal flavors that the year has to offer in the northeast & am continuing to enjoy all the tastes of summer with fresh seasonings & veggie combos.

Quinoa Salad Recipe by Jodie Fitz

1 cup quinoa, uncooked
1 – 14.5 oz. can black beans, drained
1 – 1 1/2 cups diced golden grape tomatoes
1 – 1 1/2 cups diced cucumber
3 – 4 tablespoons cilantro, fresh
1/4 cup white vinegar
1 oz. cold water
1/2 cup light olive oil
1 tablespoon lime juice
1 teaspoon onion powder
3/4 teaspoon sea salt
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
Pinch of red pepper

Cook the quinoa in 2 cups of water as directed on the package. Let it cool completely.

Add the golden grape tomatoes, cucumbers, black beans & cilantro to the cooled quinoa.

Whisk the vinegar, water, oil, lime juice, onion powder, sea salt, cumin, garlic powder, black pepper & red pepper together.

Add the dressing to the quinoa mixture until coated. Stir all of the ingredients together. Serve chilled.
