Looking for a little lunch box packing energy? Check out my Cocoa Energy Bites. these snacks are a perfect lunch box pack, after school snack or part of a breakfast combo. No matter how you eat them, they are deliciously easy to make. You simply combine and mix the ingredients in a mini food chopper, regular food processor or high powered blender. Then shape them into round balls, refrigerate and eat! They are that simple!
Cocoa Energy Bites by Jodie Fitz
1 cup rice krispie cereal
1/4 cup roasted sun flower seeds
1/4 cup roasted pepitas
1/4 cup craisins
3 tablespoons honey
1 tablespoon cocoa powder
1 tablespoon flax seeds
1/4 teaspoon vanilla extract
Put all of the ingredients into a mini food process and pulse until the ingredients are chopped and mixed well. Form the mixture into a ball shape; It makes 8 – 10. Refrigerate overnight on a waxed paper covered surface; a plate or tray will work.
When packing these snacks in the lunch box, I like to serve them with a couple of slices of sharp cheese and my Peanutty Apple Wrap (see below).
This Peanutty Apple Wrap is one of my personal favorites. And, it’s my alternative to Peanut Butter and Jelly. I l-o-v-e any and almost all combos that bring apples and peanut butter together = yum!
