Egg Waffles for Breakfast are Easy to Make

Looking for some breakfast fun? Check out these egg waffles. They’re easy & bring a whole new reason to pull out the waffle iron. I love this savory combo and it looks fancy, with actually less mess than making scrambled eggs (bonus).

Egg Waffles by Jodie Fitz

2 eggs

1 cup fresh baby leaf spinach

¼ cup milk

¼ teaspoon sea salt

1/8 teaspoon onion powder

1/8 teaspoon black pepper

Shredded Sharp cheese

Nonstick cooking spray

Chop the spinach in a mini food processor until it’s finely chopped and looks like a spice.

Whisk the eggs, milk, salt, onion powder and black pepper together. Stir in the chopped spinach.

Heat the waffle iron. Spray both sides of it generously with the cooking spray. Pour the egg mixture onto one side and close it. The eggs will take 5-8 minutes to cook.

Remove them, add a tablespoon or two of the shredded cheese and serve.

Safety Reminders:

Use an oven mitt glove before touching the waffle iron. Also use cooking tongues to remove the egg waffle.
