Looking for something new in the snacking department? Check out these no bake, super easy, Snowball Munch Energy Bites. They’re perfect for kids of ALL AGES! These energy bites are great in the lunchbox, as part of a balanced breakfast while you’re running out the door or an after school snack.
Snowball Munch Energy Bites by Jodie Fitz
1 ½ cups old fashioned rolled oats
1 ½ cups Rice Krispies® cereal
¼ cup chia seeds
¼ cup chopped walnuts
¼ cup mini dark chocolate chips
¼ cup peanut butter
¼ cup honey
¼ cup organic virgin coconut oil
Unsweetened coconut flakes
Stir the rolled oats, Rice Krispies®, chia seeds, walnuts and chocolate chips together in a bowl.
In another bowl, stir together the peanut butter, honey and coconut oil.
Add the peanut butter mix to the dry ingredients and stir them all together, Form the mixture into ball shapes.
Roll the snack balls in the coconut flakes.
Place the snowballs on a baking sheet that’s lined with waxed or parchment paper and place in the refrigerator for at least an hour.
These are great for lunch box packing, after school snacking fun.
Note: You can place the mixture in an 8 x 8 glass dish. Top it off with the coconut flakes. Using a spatula pack the mixture down, place it in the refrigerator and cut it into bars for serving as an alternative.
