Festive Couscous

Do you like couscous?  I do.  But, I have to tell you that my husband really isn’t a big couscous fan.  Sometimes my inventive food spirit that strives to be creative in getting my kids to eat certain foods is directed just as much at my husband.  Festive couscous (as I’ve dubbed it) has won over his heart and stomach.  And,  the kids like it, giving it a triple thumbs up score making it a definite share

Jodie Fitz’s Easy & Festive Couscous

10 oz. couscous

2 cups water

1 tablespoon butter

1/2 teaspoon salt

1/8 teaspoon pepper

1/2 teaspoon garlic powder

1/2 cup red bell peppers diced

1/2 cup fresh baby spinach leaves

1 cup Parmesan cheese, grated

Finely chop the spinach (I personally use my mini chopper – one of my favorite under $20 gadgets found at most department stores).

Place the water, butter, salt, pepper and garlic powder into a sauce pan.  Bring the water and spices to a boil.  Add in the couscous, red bell peppers and chopped spinach.  Let the couscous set for five minutes and fluff with a fork like directed on the package.  Stir in the parmesan cheese and serve.

Note:  Add a 1/4 teaspoon salt and 1/8 teaspoon to taste if needed.
