Flavor Packed Stuffed Peppers makes Tasty Fall Healthy Comfort Food

This stuffed pepper recipe is NOT a recipe to pull out and make on a busy weekday night. However, it is a delicious recipe to pull out and make on the weekend! It’s like healthy comfort food and the left-overs are perfect for those busy weekday nights.

Ground Turkey Stuffed Peppers by Jodie Fitz


2 pounds ground turkey
28 oz. Italian styled diced tomatoes
1 cup sweet onion, finely diced
1 cup cooked rice
1 bell pepper, finely stuffed
2 tablespoons Italian seasoning
1 1/2 tablespoons onion powder
1 teaspoon garlic powder
1 teaspoon coriander
1 teaspoon sea salt
1/2 teaspoon black pepper

Grated sharp cheese

Preheat the oven to 375 degrees.

Wash the large peppers for stuffing. Remove the top and hollow the inside to create a pepper bowl.

Place them in a large saucepan and cover with cool water. Bring them to a boil, but do not over cook them so that they are too soft. You just want to soften then slightly.

Brown the ground turkey until it’s fully cooked. Drain any excess juices. Add in the dice tomatoes, onion, bell pepper, Italian seasoning, onion powder, garlic powder, coriander, salt and black pepper. Stir the mixture together and let simmer over low heat until the pepper and onion begin to soften, but are not fully cooked; stir frequently. Turn off the heat and stir in the cooked rice before filling the prepped peppers.

Place the prepped pepper bowls in a large glass baking dish (13 x 9) that was coated with a nonstick cooking spray. Fill the peppers with the filling. Top each pepper with grated cheese.

Bake the stuffed peppers for 25 – 30 minutes.
