Fresh and Healthy Salad with Fruit in the Mix

Looking for a fresh, healthy salad to serve this summer?  Check out this mix!  It’s one of my favorites.  This healthy salad adds a ‘wowza’ to the table if you’re entertaining, but it’s deliciously good to eat any day of the week.

If you’re looking to save on time, my pick for a dressing is a poppyseed.  However, if you’re looking for the perfect pairing, try my Orange Honey Blossom Dressing; it’s quick, easy and just the right finisher for the mix.

It’s grilling season, entertaining season and let me make your life easier season (wink).  If you scroll down, after you read through the recipe, you’ll find two recipes to add to the table and round out an entire summer meal.

Fruit on Salad by Jodie Fitz

1 cup diced Pineapple, fresh

1 cup of sliced Strawberries, fresh

1 cup of Blueberries, fresh

1 cup of naval orange, peeled and diced

3/4 cup honey goat cheese, finely chopped

½ cup finely chopped pecans (optional)

5 oz. container of spring mixed green salad mix

Place half of the greens in a bowl and top with ¼ cup of the pecans, 1/4 cup of the goat cheese, ½ cup of the blueberries, ½ cup of the strawberries, 1/2 cup of the oranges & ½ cup of the pineapple.

Add the remaining greens on top & then add the additional fruit, goat cheese and top off with the remaining chopped nuts.

Why Naval Oranges? There are NO seeds within the fruit = LOVE!

NOTE: Make sure all of your fruit is properly washed before using. Hull the strawberries before slicing.

My Orange Honey Blossom Dressing by Jodie Fitz

1 naval orange

¼ cup white wine vinegar

½ cup olive oil

1 tablespoon honey

½ teaspoon onion powder

¼ teaspoon sea salt

¼ teaspoon garlic powder

Cut the naval orange in half. Squeeze the juice from the orange; it should yield ¼ cup.

Whisk the freshly squeezed orange juice together with the vinegar, oil, honey, onion powder, sea salt & garlic powder.

Serve the dressing on the salad. Store the extra in a mason jar in the refrigerator.

NOTE: Make sure the orange is properly washed before slicing.
