Gooey Caramel Apple Brownies by Jodie Fitz
1 ½ cups Price Chopper all purpose flour
1 tsp Price Chopper baking powder
½ tsp Price Chopper salt
¾ cup Price Chopper light brown sugar
½ cup Price Chopper butter, softened
2 Price Chopper eggs, large
2 tsp Price Chopper vanilla extract
2 medium – large apples
6 oz. Price Chopper caramels
2 tablespoons Price Chopper light cream
Remove the wrappers from the caramel candies. Place the caramels in a glass dish and set aside.
Peel, core and dice the apples. Set aside.
Mix the flour, baking powder, salt, light brown sugar, butter, eggs and vanilla together until mixed well. Fold the apples into the mixture and set aside.
Preheat the oven to 350 degrees. Grease and flour an 8 x 8 glass baking dish.
Add the light cream to the caramels. Melt the caramels and cream together in the microwave on high for approximately one minute. Stir the caramels and cream together until it is mixed thoroughly. If the caramels need to be melted further, simply continue the melting process in the microwave for 30 second intervals.
Spread half of the apple dough mixture into the pan. Pour the caramel mixture to create the second layer and spread the remaining apple dough on top.
Bake for approximately 40 minutes or until golden brown.
Gooey Caramel Apple Brownies serve great alone or topped with vanilla ice cream.
Caramels: The caramel candies can be found in the candy aisle at Price Chopper stores.
Melting the Caramels: You can also melt the caramels using the double boiler method. Simply place the unwrapped candies in a glass bowl with the light cream. Place the bowl in a pan filled with water approximately 1 ½ – 2 inches deep. Heat the water until boils. Keep the water on high until the caramels have fully melted and you are able to stir the caramels and light cream together thoroughly. Remove the melted caramels from the heat and let them stand for a brief cooling period, approximately 5-10 minutes, while you prepare the baking dish.
