Grilled Cheese Pockets

Soup & grilled cheese are like a winter staple! I’ve put a twist on the regular grilled cheese, turned it into a Grilled Cheese Pocket & added in some fruits and veggies the kids will love. Check out these three winning combos & have some taste testing fun with the kids while adding in some extra good bites along the way.

Honey Wheat or Whole Wheat Bread

Filling 1:

Cheddar cheese, shredded
Onion powder
Broccoli, cooked & finely chopped

Filling 2:

Cheddar cheese, shredded
Apple slices or pear slices, thinly sliced & diced

Filling 3:

Mozzarella, part-skim, shredded
Grape tomatoes, red or yellow, finely chopped

Using a large round cookie cutter cut two slices of bread into circles. Fill the center of one circle, leaving at least a ¼ of inch around the edge free with one of the filling combos above. Place the other round piece of bread on top. Use a fork to go around the edges to seal the two-piece of bread together.

Spread a light layer of butter on one side & place it onto a griddle pan. Spread a light layer of butter on the other side. Toast the sandwich as if you would a regular grilled cheese.

The spices: When adding the onion powder, cinnamon or basils to the various fillings, add just a light sprinkle to add the prefect pinch of flavor.
