Ready for a little (more) kitchen fanciful holiday food yum? Join me and learn how to make Grinch pancakes recipe with a healthier twist.  I love the idea of Grinch pancakes.  I also love the idea of a healthier twist, so here’s what I’ve done;

  • I swapped the green food dye with spinach.  Yes, that’s correct…spinach?  TRUST ME, you can’t taste it in the finished product!  This recipe is kid tested and not just with my kids.  I’ve shared my recipe with children through my travels at the Price Chopper/Market 32 Kids Cooking Club and it’s been a success. YAY!  Here’s what I have to say about the spinach in this recipe; You see the spinach is like the Grinch; it starts out tart and ends up sweet just like the story of the Grinch’s heart.
  • I’ve swapped the oil/fats with cinnamon applesauce.
  • The cinnamon applesauce and 1/4 cup of sugar sweeten the pancakes so that you don’t need syrup on top.  The recipe makes 20 pancakes using a medium sized cookie scoop.  This allows you to control the amount of sugar and eliminate the sticky mess.

These Grinch pancakes are delicious plain!  But, if you want to add a little topping try my yogurt glaze, which I’ve included below.  It’s a little snow capped, wintery looking recipe fun.

How to Make Grinch Pancakes Recipe

Grinch Pancakes by Jodie Fitz

1 cup spinach, fresh baby leaf

4 oz. cinnamon applesauce

1 egg

1 cup milk

1 1/2 cups all-purpose, unbleached flour (or, try a 50/50 mix of all-purpose and whole grain flours)

¼ cup sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon vanilla extract

Non-stick cooking spray

Place the spinach, applesauce, egg, sugar, vanilla and milk into the blender.

Blend the ingredients together; until the spinach is very fine and the mixture looks green.

In a separate bowl stir together the flour, baking powder and salt.

Add the liquid from the blender into the dry ingredients. Whisk all of the ingredients together.

Cook the pancakes over medium to low heat on a griddle pan that has been coated with non-stick cooking spray. 

Top the pancakes with yogurt glaze.

Jodie’s yogurt glaze;

½ cup Greek vanilla yogurt

¼ cup low fat milk

1 tablespoon honey

Whisk the yogurt, milk and honey together well. Drizzle the mixture on the pancakes.

NOTE: You cannot taste the spinach in this recipe.

In the recipe I cut the fat using fat free frozen yogurt and low fat milk.  It’s a crowd pleaser!!!  You won’t regret trying this blended yum.
