No-bake Cheesecake Recipe

I love a good old fashioned cheesecake, especially my grandmother’s recipe. However, there’s not always time for it. So, as an alternative & a way to simplify my life, I am lovin’ this no-bake cookies n’ cream no-bake Cheesecake recipe.

THE FILLING:

8 oz. whipped cream cheese

8 oz. whipped topping

3/4 – 1 cup crushed Oreo’s

¼ cup confectioner’s sugar

3 tablespoons milk

1 teaspoon milk

Stir the cream cheese, confectioner’s sugar, milk & vanilla together by hand. Fold in the whipped topping & the crushed oreos.

THE BASE:

Option 1:

Mini Fillo Shells

Holiday Sprinkles

Chocolate morsels

Melt the chocolate morsels in a glass bowl in the microwave on high for 1 minute. Stir to finish melting the chocolates. Dip to the top of the fillo shells into the chocolate & then into the sprinkles to create a decorative rim.

Option 2:

Oreo Cookies

Butter

Crush the Oreo cookies in a mini food processor. Melt butter enough butter in glass dish to coat the Oreo cookie crumbs with.

Place cupcake liners in a cupcake pan. Add enough of the coated crushed cookie mixture to the base and pack it in to form a bottom crust that’s only about 3/4 inch thick. Continue the process until you have made as many as you need.

Note: The number of Oreos used simply depends on how many you are making. Start with one row of cookies to 2-3 tablespoons of melted butter & go from there….

Fill it Up:

Fill a Ziploc bag with the cream cheese mixture, clip one corner with scissors & pipe the filling into either the mini filo cups or the cupcake size.

*Mini Fillo shells can be found in the freezer aisle; they are fully cooked & simply need to be thawed & filled.
