Mother’s Day is just around the corner and there’s nothing like quick, easy, no-bake ideas for the kids! And, even better….this one has been mini-sized into a Key Lime Bite with a low fat content and only takes 15 minutes from prep to serve….
I love them for many reasons….no knives, no stoves, no ovens, it’s quick and easy, I love Key Lime AND I eat less when we serve mini bites. Yup, it’s a win-win at my counters that’s super scrumptious.
Key Lime Bites by Jodie Fitz
7 oz. fat free sweetened condensed milk
4 oz. light or fat free whipped topping
1/4 cup lime juice
1/2 teaspoon vanilla extract
Stir the sweetened condensed milk, lime juice and vanilla extract together. Fold in the whipped topping. Scoop the cream mixture into a sealable lunch sized bag and close the top tightly. clip a corner edge and pipe the cream into mini fillo shells.
Mini Fillo Shells: These can be found in the freezer aisle of most supermarkets and are already pre-cooked. Simply remove them from the freezer, thaw and use!
Lessons for Kids: Every recipe has many lessons incorporated, but a high-lights in making key lime bites would be the concept of folding ingredients together. Folding is when a heavier mixture is combined with a lighter mixture by passing a spatula down through the mixture, across the bottom, and up over the top. This process continues until all of the ingredients are combined.
