My husband laughed as I was trying to take these out of the pan and my kids surrounded me like vultures hoping I’d accidentally scoop them the wrong way so that I’d hand over the broken bits to them…the platter was for someone else, but of course I made enough to share and kept myself on the ‘good’ list…
Jodie Fitz’s Quick & Easy – Mini Mint Brownie Bites
1 box of Brownie Mix
1/4 cup all purpose flour
1 1/2 cups white chocolate chips
1/4 teaspoon mint extract
Mix the brownie mix as directed with eggs, water & oil. Using an electric mixer, add in the flour and mint extract; mix thoroughly. In a mini chopper, grind 1 cup of the white chocolate chips. Stir in the ground white chocolate morsels. I bake these mini’s in the mini muffin pans at 350 degrees for approximately 18-20 minutes. You can now find mini liners at your local craft store & if you don’t use them, simply make sure you grease the pans and flour before baking.
Remove the brownies from the pan and let them cool.
Melt the 1/2 cup of white chocolate in a glass bowl in the microwave for one minute on high. When you remove the chocolate it will not look fully melted, simply stir until the chocolate has fully melted. Drizzle the white chocolate on top of the brownie bites. I top them (before the white chocolate sets) with a combination of holiday sprinkles and crushed candy cane. ENJOY this very simple and very delicious treat.
