The warm temperatures were a surprise in the northeast this week and it left my crew wanting some cool down treats. I pulled out the fresh pineapple and turned it into one of our Sno-Cone Alternatives using fresh fruit. It’s a delicious replacement for sherbet, son-cones or ice-cream. I usually like to serve them up in son-cone holders, but I haven’t replenished my supply for the season quite yet….but that didn’t keep us from enjoying this the other night after everyone got done with their sporting activities.
Pineapple Freeze by Jodie Fitz
3 Cups freshly crushed pineapple*
1/2 cup pineapple juice
1 tablespoon honey
1/2 teaspoon vanilla extract
Stir the crushed pineapple, pineapple juice, honey and vanilla extract together. Pour the mixture into an 8 x 8 glass dish. Place it in the freezer and let it begin to freeze for at least two hours. Using a fork begin to scrape the pineapple to create frozen shavings. Most likely you will have to place the pineapple back into the freezer and let it set another hour and scraping once again. Serve it up & enjoy. It tastes even better in a son-cone holder, but I haven’t replenished my supply yet.
*I purchase the fresh pineapple that has been peeled and cored. I run it through a mini chopper or food processor to create fresh crushed pineapple.
