No-bake Cherry Cream Pie Bites are Easy to Make

Amber joined me in the kitchen to make mom one of my favorite desserts, Cherry Cream Pie Bites. My mom used to make me a version of this every year for my birthday.  As I grew and began to experiment, I gave it a ‘better bite’ with a different kind of pie crust, low-fat ingredients & fresh cherries to top it off. This recipe is a great dessert to serve for Mom on Mother’s Day or for the kids to make when company is coming. It’s a no-bake treat that not only easy to make, but will get rave reviews!

No-Bake Cherry Cream Pie Bites by Jodie Fitz

14 oz. fat-free sweetened condensed milk

8 oz. Price Chopper light whipped topping

1/2 cup Price Chopper lemon juice

1 teaspoon almond extractno-bake cherry cream pie

1 teaspoon Price Chopper vanilla extract

Dark Cherries (frozen, pitted and fresh – no sugar added)

Almonds, slivered

Fillo dough, un-cooked

Canola oil

Non-stick cooking spray

Pre-heat the oven to 375 degrees.  Spray a muffin pan with the non-stick cooking spray.  Cut approximately 3 sheets of fillo dough so that you can gently lay a strip in a muffin tin and then cut several layers to fit crisscrossed on top so that in the end you fill the muffin tin.  Repeat this process until you have filled all 12 cups.  Baste the fillo dough lightly with the canola oil.  Bake the cups for approximately 5 – 7 minutes.  The fillo will be lightly browned.  Let the cups cool completely before removing them from the pan.

Fold the sweetened condensed milk, lemon juice and extracts together until all of the ingredients thoroughly mixed.  Fold in the whipped topping.  Let the cream mixture set for at least an hour in the refrigerator.

Remove the fillo cups from the pan and place them on serving dishes.  Fill each cup with a scoop of the cream mixture.  Top them with the cherries, a little bit of the natural cherry juice and slivered almonds.

Note: The cherries should be completely thawed before serving.
