No Bake Peanut Butter Granola Bars

As I write this, I want you to know that I am in full denial that it’s time to get everyone ready for Back to School activities. Although we have a few weeks, all of our back to school prep with supplies & closet clean outs & sneaker purchases has me focused on the recipes we will soon be serving on a regular basis. This summer we made a No Bake Peanut Butter Granola Bar for snacks thinking ahead to after school snacks & lunch box packing yum.

It’s a winner here! This recipe is easy and takes only 15-20 minutes to make. This recipe is more than kid tested & kid approved (lol). Every time we make it, it doesn’t last….it’s gone by the end of the day. No complaints!

Peanut Butter Chocolate Granola Bites by Jodie Fitz

1 cup rice Krispie® cereal
½ cup Price Chopper peanut butter
½ cup Price Chopper old-fashioned rolled oats
¼ cup sunflower seeds, salted
3 tablespoons flaxseed
3 tablespoons Price Chopper honey
½ teaspoon Price Chopper vanilla extract
½ cup mini chocolate morsels
Non-stick cooking spray

Coat an 8×8 glass dish with a heavy coat of non-stick cooking spray.
Add rice Krispie® cereal, peanut butter, rolled oats, sunflower seeds, flaxseed, honey, vanilla extract and chocolate morsels into a bowl. Stir the ingredients together thoroughly with a spoon.
Pour the mixture into the pre-coated glass dish. Using a spoon, press the mixture tightly into the dish evenly and tightly. Place the glass dish into the refrigerator and let set for one hour.

Cut the recipe into equal sized bars. Using a spatula, remove each bar from the pan and place them in an airtight storage container with waxed paper in between layers for storing.
