Snake Bites for Lunch!
Say what? Yes, you heard me…snake bites!
What’s a snake bite you ask?
Well, it’s a totally fun way to eat lunch or have an afternoon snack.
Check out this easy twist using your favorite chicken or tuna salad combo (or a chopped tossed salad) & find out how cucumbers make them perfectly crisp & fresh to serve.
Snake Bites for Lunch by Jodie Fitz
1 large cucumber
Tuna or Chicken Salad or chopped tossed salad
1 red bell pepper
Cut the cucumber in half vertically & then again horizontally. You should have 4 long halves of cucumber.
Slice two halves into semi circles; set aside.
Scoop out the remaining halves so that you have the outer layer of the cucumber. Fill those cucumber boats with tuna or chicken salad.
Place the semi circles on top, staggered like the photo so that it creates a slithering snake affect.
Cut a tiny piece of olive for the eye.
Cut a thin strip of red bell pepper for the tongue.
You can just pick it up & eat!
