Pulled BBQ Chicken Sliders are delicious and easy to make.  This Instant Pot Recipe is perfect for dinner, gatherings and game day festivities.  It’s a crowd pleasing recipe.

Pulled BBQ Chicken Sliders

Pulled BBQ Chicken has been a recipe I’ve made for many, many years.  It makes a delicious sandwich, but my favorite serve is in the form of a slider.  

Pulled BBQ Chicken Sliders are simply the right size bite.  They even make dinner time fun. I can make the chicken base ahead of time and keep it warmed, grab the slider sized brioche rolls and pick up one of our favorite pre-made Cole slaws and simply create a buffet of yumminess;  ‘Everyone make their own’ is my favorite way to go.

There’s so many sides and/or other dishes to serve with these little bites; skies the limit.  Homemade chips, potato wedges, fries, veggies….endless options!

I have recently started making this recipe in my Instant Pot, which makes entertaining, or dinner, so much faster.  There’s no early prep required and there are no worries of forgetting to turn on the crockpot at the right time. This recipe really only takes 20 minutes.  YES, 20 minutes!  So entertaining and/or dinner just got a whole lot better…

Here’s the recipe to mix, pull and enjoy…

Pulled BBQ Chicken Sliders

Ingredients

  • 4-5 pounds boneless chicken thighs
  • 2 cups Sweet Baby Ray’s barbecue sauce
  • ¼ cup of water, chicken or vegetable broth
  • 1 large sweet onion
  • 1 clove garlic
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions

Peel and slice the onion into thin slices.

Place the chicken thighs into the instant pot.

Add the onions to the Instant Pot.

Stir the 1/4 cup of broth together with 1/2 cup of the barbecue sauce along with the minced garlic, onion powder, black pepper and garlic powder.

Stir it into the instant pot with the onions and the chicken. Once everything is coated, set the Instant Pot for 12 minutes and let it cook!

Once it's done and the pressure has been released, simply take a heat resistant spatula and break the chicken apart into small pieces. Stir everything together adding up to 1 1/2 cups of additional barbecue sauce until you get the desired amount of barbecue sauce.

Serve it on mini slider rolls or dinner rolls topped with your favorite Cole slaw.

Notes

More on making this recipe:

Leftovers?  Simply cool the pulled BBQ chicken completely.  Place the leftover cooked chicken into a snap and seal freezer bag or other airtight container and freeze.  Then all you have to do is thaw and warm for another delicious dinner.

Alternative Cooking Methods?  You can cook the chicken in a crockpot.  Adapt the recipe by adding all of the ingredients into the crockpot.  Cook for 4 – 6 hours on low.  Remove the chicken, shred it and add it back into the barbecue sauce.

You can also cook the chicken in a Dutch oven.  Add all of the ingredients into the Dutch Oven.  Cook at 325 degrees for approximately 90 minutes.  Remove the chicken, shred it and add it back into the barbecue sauce.
