Quinoa Pilaf Recipe Share….

It’s still passover season so I reached out to my friend at www.theangelforever.com and her husband www.techydad.com to see what they were sharing at their table this week.  They shared one of their family favorites during passover, a Quinoa Pilaf.  Doesn’t it look great?  I’m going to be playing with some Quinoa Pilaf myself…thanks for the inspiration and for sharing from your table to ours!  I’m wishing your family and everyone else who celebrates passover a very blessed season!

Quinoa Pilaf Shared from Jason & Beth

1/2 cup carrots, diced

1/2 cup green onion, diced

1/4 cup celery, diced

1/4 cup green pepper, diced

1/4 cup red pepper, diced

6 cups of cooked quinoa (follow the basic recipe on the package for cooking instructions)

1/4 cup butter or olive oil

2 cloves of garlic, crushed

1 cup almonds, sliced

1/4 teaspoon oregano

salt to taste

Saute the vegetables in the oil or the butter until crisp.  Stir in the oregano.  Add the sautéed vegetables to the cooked quinoa and salt to taste.  Serves 6.
