Looking for a different way to serve salads?  I love serving salad for dinner, in fact, we probably have some sort of salad creation at least once a week.    One of my favorite ways to serve salad is to create a ‘make your own’ salad bar.  Why? It’s way more fun to create your own, it’s relatively quick and easy, it actually stores easier with left-overs and everyone eats just a few more veggies.

Here’s one combination that was served at our counters this week;

Salad Tray

Red bell peppers, green bell peppers, black beans, avocado…

Tortilla strips and cheese

Cabot 75% reduced fat cheese, tri-colored salad tortilla strips by Fresh Gourmet.

grilled chicken

Rubbed Grilled chicken…

romaine

All served on a bed of romaine lettuce topped with our favorite dressings.

My Grilled Chicken Rub for this salad creation:

1 – 1 1/2 teaspoons crushed red pepper

1 teaspoon cumin

3/4 teaspoon salt

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon pepper

Simply stir all of the ingredients together!

Note:  Halve and pound three large chicken breasts.  Season each side with the rub and grill.

    1. We eat salads at least once a week & I have found that for some reason the family just likes it in a ‘salad bar’ fashion better than all mixed to serve…so we just run with what works! Have a great day & a great week :).

  3. It’s getting warmer here and we have been having more salad lately, especially now there is fresh lettuce from the garden. Izzy loves cucumber and has just warmed to tomatoes too. Thanks for the great chicken recipe, I’ll be trying that rub soon. Thanks for linking up 🙂
