Do you struggle with getting kids to eat their veggies?  If the answer is yes, struggle no longer!  I’ve got a salad stuffed cyclops recipe that makes the perfect healthy snack for Halloween.  These Salad Stuffed Cyclops will capture the imagination of even the pickiest of eaters. 

If the answer was no, then that’s serious ‘awesome sauce’, but still follow along because this recipe is SUPER delicious and RIDICULOUSLY easy.  Your veggie eaters will love these yummy bites.  

Salad stuffed cyclops are the perfecto combo of a healthy snack mixed with Halloween and it proves that festive food fun can be amazingly exciting without the sugar. They’re like combing craft time with snack time, which makes them a double winner.

What’s needed to make this healthy snack?

5 Sunset Grown Mini Bell Peppers (approximately 5” in length)

1 1/2 cups chopped salad

2 tablespoons light ranch dressing

Black olives, sliced 

1 fresh beet

Alpha alpha bean sprouts (optional)

Here is how to assemble this healthy snack.

Wash the beet.  Removed the ends; as if you were cutting an onion.  Peel the beet with a potato peeler.  Shred approximately 1 tablespoon of beet per Cyclops using a fine cheese grater.

Wash the peppers. Cut of the end of the pepper with the stem to create a flat edge so that the finished Cyclops can stand. Remove the seeds from the inside of the pepper.

Place the salad and the dressing into a mini chopper and pulsate until the salad is finely chopped almost like a Cole slaw. Stuff the peppers with the chopped salad & pack it in with a spoon. Stand the peppers on a serving dish.

Optional: Add alpha alpha bean sprouts onto the plate for the Cyclops to sit on as if they are rising from the green lagoon as an added and dramatic affect for our silly salad stuffed cyclops.

Pinch approximately a tablespoon of grated beets together & add it as hair to the top of the standing pepper.

Pat the olive rounds dry with a paper towel. Spread cream cheese onto one side (approximately ¼ – ½ teaspoon) to use as edible glue and stick the olive to the pepper for the Cyclops eye affect; it will not slide if the pepper and olive are each dry.

 Salad: Make your own favorite combination before chopping it or purchase a pre-made bag of salad to keep it even easier; it’s a time saver and every parent needs time savers. 

Extra, extra, read all about it!  We love to add sunflower seeds in our chop for a little extra, flavorful crunch.

Lessons from the Salad Stuffed Cyclops for the kids in the kitchen!

 *Salad: We often used romaine lettuce, carrots, bell peppers, tomatoes and cucumbers in our combination, but you can use all of your kid’s favorites when making your salad to stuff your Cyclops. You can even purchase a pre-made bag of salad at your local Price Chopper Supermarket to keep it easy and chop it up in the recipe process.
