I love salad stuffed racecars! You can take lunch or dinner to a whole new level with the kids by following a few simple steps. Pull out a mini chopper, lay out a salad buffet, let everyone add their favorite salad ingredients into it, chop it up, add a tablespoon of salad dressing & build your way to summer food fun with the easy racecar instructions below.

Salad Stuffed Racecars by Jodie Fitz

2 small peppers*
1 cup Fresh Express® Salad mix
1 cup Eat Smart® vegetable medley with broccoli, cauliflower & carrots
1/8 cup Seffon Farms® pistachio nuts
Price Chopper Sliced olives
1 – 2 tablespoons of Marie’s yogurt based ranch dressing

Create the Car Base: using a sharp knife, cut an oval on top of the pepper. Clean out the center & rinse the pepper. You may possibly have to shave a slight edge with a sharp knife on the exterior/bottom of the pepper so that it has a flat edge to rest on.

*Use a small pepper. Waxed Hungarian, Italian peppers or the Sunset baby bells work best.

Create wheels: Wash & slice the cucumber. Spread come cream cheese on one side of the slices you are planning to use for wheels & attach them to the sides. Note: We like the veggie garden flavored cream cheese for this recipe combo.

Fill the Racecars: In a mini chipper or food processor, chop the salad mix, vegetable medley & pistachios until chopped well. Stir in your favorite salad dressing. Fill the car base & add an olive slice for a steering wheel.
