Everyone loves pizza pockets. Well, we have our own version this month in the form of Shamrock bites so that we can control the ingredients and add in more veggies this month. They are deliciously easy to make and the kids will love this newfound recipe making, and taste testing fun.
Shamrock Cheesy Bites = Pizza Pocket Fun by Jodie Fitz
PICS Sharp cheese, shredded
Broccoli, cooked & diced into small pieces
Non-stick cooking spray
Sea Salt, fine crystals
PICS olive oil
Other supplies needed:
Large shamrock cookie cutter
Parchment paper or a cutting board
Preheat the oven to 375 degrees.
Roll your pizza dough out onto a large cutting board or parchment paper.
Use your shamrock cookie cutter to cut shamrock shapes out of the dough.
Fill the center of half of the shamrocks with the shredded cheese & finely diced broccoli (SEE MY FAVORITE OVEN ROASTED BROCCOLI BELOW). Lay the other half of the dough shamrocks on top & use a fork to go around the edges to seal the pizza pockets.
Place the shamrocks onto a pizza stone that has been coated with the non-stick cooking spray. And, baste the top of the shamrocks with a very light layer of olive oil & a pinch of sea salt.
Bake the shamrocks for approximately 10 minutes, until the tops & bottoms have lightly browned. Serve warm.
