Shamrock Cheesy bites make Delicious Pizza Pockets

Last Updated on

Everyone loves pizza pockets. Well, we have our own version this month in the form of Shamrock bites so that we can control the ingredients and add in more veggies this month. They are deliciously easy to make and the kids will love this newfound recipe making, and taste testing fun.

Shamrock Cheesy Bites = Pizza Pocket Fun by Jodie Fitz

Pizza dough*

PICS Sharp cheese, shredded

Broccoli, cooked & diced into small pieces

Non-stick cooking spray

Sea Salt, fine crystals

PICS olive oil

Other supplies needed:

Large shamrock cookie cutter

Pizza Stone

Parchment paper or a cutting board

Preheat the oven to 375 degrees.

Roll your pizza dough out onto a large cutting board or parchment paper.

Use your shamrock cookie cutter to cut shamrock shapes out of the dough.

Fill the center of half of the shamrocks with the shredded cheese & finely diced broccoli (SEE MY FAVORITE OVEN ROASTED BROCCOLI BELOW). Lay the other half of the dough shamrocks on top & use a fork to go around the edges to seal the pizza pockets.

Place the shamrocks onto a pizza stone that has been coated with the non-stick cooking spray. And, baste the top of the shamrocks with a very light layer of olive oil & a pinch of sea salt.

Bake the shamrocks for approximately 10 minutes, until the tops & bottoms have lightly browned. Serve warm.

*Experiment with different pizza dough flavors; whole wheat vs. traditional. Looking to Save time? Try the Wewalka pizza dough located in the dairy coolers at Price Chopper/Market 32 Supermarkets.

  2. Hi Jodie, who doesn’t enjoy a pizza, right? And the joy of a pizza pocket is the ‘topping’ stays in the middle. Cheese and broccoli make a tasty filling and the recipe sounds simple enough for older children to enjoy having a go at.

  4. Jodie, as an Italian I love the idea of celebrating St. Patrick’s Day with pizza and I am a hundred percent sure that my kids would be more enthusiastic about shamrock pizza pockets than corned beef and cabbage. These are super cute. Pinned it!
