Yummmmmmmmm… I love grilled veggies in the summer & oven roasted veggies during the colder temps. This week it was all about oven roasted broccoli and it was total delish on a dish! In fact, I L-O-V-E noshing on the leftovers.
The kick of flavor comes in the red pepper flakes, so depending on your family’s taste buds, you can tone it down or turn it up a notch, but either way you will want to add them.
Oven Roasted Broccoli by Jodie Fitz
Olive oil (virgin or light)
Crushed red pepper flakes
Preheat the oven to 400 degrees.
Wash your broccoli and cut the broccoli florets. Toss them in a light coat of olive oil.
Spread them on a baking sheet that has been treated a non stick cooking spray (or rubbed with a bit of olive oil on a paper towel).
Generously coat with onion powder, lightly coat with garlic powder, add sea salt and red pepper flakes to taste.
Bake for approximately 20-25 minutes stirring about half way through the baking process. You will know they are done when the edges of the broccoli are golden brown & have that delicious slight crisp along the edge and they are soft enough to prick with a fork.
