Blueberry Avocado Smoothie

A Blueberry Avocado Smoothie is an unlikely combination, but you HAVE to TRY it! The avocado brings a rich creaminess to the blend & it’s undetectable in taste with the blueberries and a few other key ingredients. It’s worth pulling the blender out & giving it a taste testing whirl.

Blueberry Avocado Smoothie by Jodie Fitz

1 avocado, ripe
1 cup PICS fresh frozen blueberries
1 ¼ cup vanilla almond milk, unsweetened
1 teaspoon Price Chopper vanilla extract
½ teaspoon almond extract
1-2 tablespoons PICS honey (optional)

Remove the fruit of the avocado (see below). Place the fruit of the avocado, frozen blueberries, almond milk, vanilla & almond extracts and the honey into a blender. Blend well before serving.

The avocado makes this recipe creamy.

Experiment: Add more almond milk if you prefer a thinner smoothie. Or, turn this into a blueberry avocado pudding like dessert by reducing the almond milk to ¾ cup & eat it with a spoon.

Is my avocado ripe? You know an avocado is ripe by the touch of the avocado. If it’s hard, it’s not ripe. If you hold it in the palm of your hand and it yields to a light amount of pressure, it’s ready to eat. If it indents & stays indented, it’s over ripe.

How to cut an avocado
: Using a knife cut the avocado lengthwise. The knife will make contact with the pit of the avocado; simply drag it along the pit to cut around it. NOTE: cut away from yourself & use caution. Twist the two halves of the avocado & separate it in half. Immediately scoop out the one side, remove the pit on the other side & continue to remove the fruit from the other side.

Do I need a special avocado tool:
You don’t need an avocado tool. You can use a sharp knife to cut it open, a spoon to scoop & a fork to mash if desired. However, there are a variety of avocado tools on the market if you are in search of one.

Nut allergies? Replace the almond milk with rice milk or a dairy source. Replace the almond extract with an additional ½ teaspoon of vanilla extract.

Did You Know that the skin & pit of the avocado are not edible?

    1. I’m a huge smoothie drinker & so are two of my kids, but one of them (along with their dad) are not big on smoothies ~ lol! I hope you enjoy the dessert opton :)…
