I picked up Trader Joe’s Sweet Corn Burrata Basil Ravioli, and it immediately inspired this simple skillet dinner. The sweet corn and creamy burrata-filled ravioli pair beautifully with sautéed peppers, red onion, fresh spinach, and sweet summer corn.

It’s an easy weeknight dinner, but it’s also pretty enough to serve when you have guests. And if you’re looking for a great way to use leftover corn on the cob, this is it!

Why I Love This Dinner

It’s one of those recipes that looks like you spent much more time making it than you actually did.

Ingredients

Serves approximately 4

  • 2 packages Trader Joe’s Sweet Corn Burrata Basil Ravioli
  • 8 oz baby leaf spinach
  • ½ medium red onion
  • 2 yellow bell peppers
  • 2 ears sweet corn, cooked
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Directions

1. Prepare the onion

Wash, peel, and finely dice ½ of a medium red onion.

2. Prepare the peppers

Wash and rinse the yellow bell peppers. Remove the stems and seeds, then dice the peppers into bite-sized pieces.

3. Sauté the vegetables

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add the diced onion and yellow peppers. Cover and cook, stirring occasionally, just until the vegetables begin to soften.

Don’t overcook them! You want them softened but still colorful and slightly crisp.

4. Add the ravioli

Add the ravioli to the skillet and cover.

Continue cooking over medium heat, stirring occasionally, until the ravioli is heated through and cooked according to the package directions.

5. Add the spinach

Wash the spinach and add it to the skillet.

Cover and reduce the heat to low. Allow the spinach to wilt into the mixture.

6. Add the corn

Remove the kernels from the cooked corn on the cob.

This is a great way to use leftover corn!

Add the corn to the skillet and gently stir everything together. Allow it to warm through.

7. Season and serve

Season with salt and pepper to taste.
