Italian chicken kabobs are a whole new way to enjoy an Italian flavored dinner together. This marinated chicken recipe goes great with bruschetta, salad, pasta dishes and my Baked Zucchini Fries (recipe link provided below).
Here is the recipe to marinate, skew, broil and share…
- 4 pounds of boneless chicken breasts
- 6 oz. tomato paste
- ¼ cup balsamic vinegar
- 3 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon onion powder
- ½ teaspoon sea salt
- ½ teaspoon garlic powder
Cut the chicken into pieces.
Stir together the tomato paste, balsamic vinegar, olive oil, Italian seasoning, onion powder, sea salt and garlic powder.
Add the chicken to the marinade, cover and refrigerate for an hour.
Skew the chicken.
Place the skewers on a broiler pan or baking sheet.
Broil the chicken on medium to high until it’s fully cooked; approximately 15-20 minutes depending on the size of your chicken pieces.
Wooden Skewers: If you are using wooden skewers, soak the skewers for 20 minutes in water before adding the marinated chicken and cooking.
Time Saving Tip: Make the marinade add it into a freezer bag or other airtight container, add the chicken and make sure it’s completely coated. Freeze the mixture so that on a busy night you can pull the marinated chicken from the freezer and let it marinate.
Clean Up: Line your pan with foil before adding the chicken kabobs for an easy clean up.
