Italian chicken kabobs are a whole new way to enjoy an Italian flavored dinner together.  This marinated chicken recipe goes great with bruschetta, salad, pasta dishes and my Baked Zucchini Fries (recipe link provided below).

16 servings? This is based on a half pound per person. The left-overs are perfect for another lunch, dinner or after school snack. And, teenagers often eat more than a half pound ~ just saying!

Wooden Skewers: If you are using wooden skewers, soak the skewers for 20 minutes in water before adding the marinated chicken and cooking.

Time Saving Tip: Make the marinade add it into a freezer bag or other airtight container, add the chicken and make sure it’s completely coated. Freeze the mixture so that on a busy night you can pull the marinated chicken from the freezer and let it marinate.

Clean Up: Line your pan with foil or parchment paper before adding the chicken kabobs for an easy clean up.

Italian Chicken Kabobs

Ingredients

  • 4 pounds of boneless chicken breasts
  • 6 oz. tomato paste
  • 3 oz. balsamic vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon onion powder
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder

Instructions

  1. Cut the chicken into pieces.
  2. Stir together the tomato paste, balsamic vinegar, olive oil, Italian seasoning, onion powder, sea salt, and garlic powder. 
  3. Add the chicken to the marinade, cover, and refrigerate for at least an hour.
  4. Skew the chicken. 
  5. Place the skewers on a broiler pan or baking sheet.
  6. Broil the chicken on medium to high until it’s fully cooked; approximately 15-20 minutes depending on the size of your chicken pieces.
